- White chicken pulao is a variation of chicken pulao cooked without tomato and any colouring spices.
ingredients:
500g chicken
500g basmati golden rice or of your choice
3 medium size onion fine chopped
8 tbsp fresh yogurt(120g)
10 tbsp ghee or oi(150 g)
5-6 green chilies paste
chicken stock
1+1 tbsp ginger garlic paste
3-4 small cinnamon sticks
4 green cardamom
1 black cardamom
10-15 black pepper corn
8-10 cloves
3-4 bay leaves
1/3 tsp mace powder
1/3 tsp nutmeg powder
1 tbsp coriander powder
2 tbsp salt or as per your taste
4-5 tbsp green coriander
2 tbsp pure ghee(optional)
Method:
Heat a wok, add ghee once ghee heats up add chopped onions fry it till onion gets golden in color.
Add ginger garlic paste saute it for two min.
Add chicken fry it till it changes its color.
Add green chili paste,coriander powder,salt and chicken stock.
mix it well, add yogurt, fry it till water gets completely dry.
Add pre soaked rice and 700 ml of water.
add coriander leaves as well.
Cover it with a lid and cook for 9-10 min on ow flame.
now put a heavy bottom pan or tawa under the pulao wok and cook it for 15-20 min on very low flame.
Garnish it with green coriander leaves.
Serve it with salad, raita and chutney.
