Here's a classic Caribbean fish soup or fish broff as it's called in Trinidad and Tobago. Not as heavy and thick as traditional Caribbean soups, but loaded with vegetables and flavored with herbs and thick slices of marinated fish.The ideal way to finish off this soup is to adda tablespoon of golden ray butter to the pot 2 minutes before you take off the stove. You may notice that the recipe is very similar to Jamaican fish tea as well.
You'll need....
2- 3 lbs ocean fish (cubed and washed with lime juice)
8-10 cups of water
3 cups fish stock (or chicken/vegetable)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon Caribbean green seasoning
1 onion
4 cloves garlic
2 potatoes
1 sweet potato
4 green cooking bananas (green fig)
2 cups chopped spinach (optional)
2 scallions
4 sprigs thyme
2 tablespoon shopped shado beni (culantro .. cilantro can also be used)
1 scotch bonnet pepper
1 cup diced pumpkin
1 carrot
1 tablespoon veg oil
