This is the best potato soup. Just make sure that you get potatoes that don't cook up so much or you don't cook it as long as I did. LOL These Idaho potatoes cooked up a lot. Did any of you have a Shoney's Restaurant near you? If you did and you ate some of their potato soup, this is exactly like theirs. You use as many potatoes as you want for yourself or your family, then dice up as many onions and celery as you want, but the more onions and celery that you saute` the better it will be. Saute` them with a stick of butter or margarine. Once you have the potatoes in the pot, add all of the saute`d onions and celery into the water with the potatoes, including the margarine that you saute`d them in. Add another stick of margarine in the pot with the water, potatoes, etc. and let it boil until the potatoes are soft. Then add a cup of milk mixed up with 2-3 Tbsp of flour and let it thicken. Then serve it with your favorite cornbread. You will love it! I know my family does. Thanks for watching!!
