Tuna noodle casserole is a child hood favorite. Comfort food at its finest to be sure. This casserole is super simple to put together and really delicious. One recipe is enough for our family to eat twice in a week. We love this reheated and like many casseroles of this type, it gets even better the second time.
Full of cheesy creamy goodness from cream of chicken and cream of celery soup, mushrooms, egg noodles, cheese, tuna and a salty surprise from sliced back olives stirred into the mix. Of course you can leave out what you don't like and add in what you do, like frozen peas or whatever you enjoy in your tuna casserole.
You can also boost the tuna by adding one or two more cans if you choose, and even more cheese, or less if you desire. This is a real throwback to my child hood. My mom used to make a very different version of this classic. My version actually is inspired by something from my ex mother in law. Even though she hated me, her casserole is rated a 10 in our house.
