http;//www.noreenskitchen.com Greetings! Remember back to New Year's day when I made my annual stuffed cabbage dinner and had about 2 pounds of meat/rice mixture leftover? I doubled bagged it and froze it. Dinner tonight will be porcupine meatballs made from that meat mixture. If you don't have any leftover meat mixture like this, don't worry, simply use 2 pounds of ground meat. I like to mix beef and pork but you could use all beef, all pork, ground turkey, whatever! This dinner was quick to put together and all I had to do while it was in the oven was make some mashed potatoes and a green salad. These are wonderful comfort food. I know that there is a double starch, but who cares!? These are filling and they go a long way. This dish will feed a family of 4 for two dinners! That is a lot of food for a little work.
I have used a family size can of tomato soup here, because I like the way it tastes and it does not need any extra ingredients. You don't have to use the soup, you could just bake these up in some tomato juice or all crushed tomatoes for that matter would be fine. No matter how you choose to do it, they will turn out great. The rice absorbs all the liquid so you will want to make sure that you have enough liquid in the pan, otherwise you may end up with a charred mess in the end.
