BACON & BOURBON JAM - recipe

BACON & BOURBON JAM - This is food for the gods!! a must try recipe. Sadly I didn't invent this myself, but its a so good.

Recipe
Ingredients:
- 500 gram bacon
- 1 cups of shallots, finely chopped
- 1/2 cup onions, finely chopped
- 2 garlic cloves, finely chopped
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/2 cup bourbon
- 1/4 cup maple syrup
- 1/4 cup balsamic vinegar (use high quality so you don't need to add sugar)
How To
- Cut the bacon in to thin strips
- Render the fat of the bacon
- When the bacon is nice and crisp seperate the fat from the bacon
- Let the bacon cool down and chop it fine
- Add the onion, shallots and garlic with 2 tablespoon of the bacon fat and let the onions turn soft.
- Add the rest of the ingredients including the bacon
- cook for 5 more minutes
- Put the bacon and bourbon jam in a jar and enjoy the glory!!
