MARSHMALLOWS
Ingredients
1½ cups granulated sugar
3 tablespoons gelatin
Icing sugar as required
¾ cup corn syrup
A pinch salt
A drop red edible gel colour
Method
1. Line a glass baking tray with a parchment paper and dust with some icing sugar.
2. To bloom gelatin, take ½ cup chilled water in a bowl. Add gelatin and mix gently. Place the bowl in a double-boiler and cook till it melts or dissolves.
3. Heat ¾ cup water in a non-stick pan. Add granulated sugar, corn syrup and salt, mix and cook till sugar melts and well incorporated. Bring to 140ºC. Remove from heat.
4. Take bloomed gelatin in a bowl and whisk well till it turns white using an electric whisker. Add sugar-corn syrup gradually and whisk till soft. Add edible gel colour and whisk till well combined.
5. Put the prepared mixture into lined baking tray and level it out. Dust some icing sugar over, place a parchment paper on top and press lightly. Set aside for 2-3 hours.
6. Cut and serve.
Preparation Time: 2-3 hours
Cooking Time: 15-20 minutes
