Ingredients!
For the cake:
100g Softened Butter
175g Caster Sugar
175g Self-Raising Flour
1 tsp Baking Powder
2 Large Eggs
4 tbsp Milk
Finely grated rind of 1 lemon
For the paste:
Juice of 1 Lemon
100g Caster Sugar
Step-by-step guide!
1. Preheat oven to 180°C. Grease the sides of your cake tin, and line the base of the tin with baking paper.
2. Measure all of the ingredients (for the cake) into a large mixing bowl and mix until smooth. Fold the mixture into your pre-prepared cake tin.
3. Bake the cake in the oven for 35-40 minutes, until the cake is golden and when testing the middle of the cake with a knife, the knife is clean when removed.
4. While the cake is baking, make the lemon paste by mixing together the lemon juice of 1 lemon and 100g of caster sugar in a clean mixing bowl. When the cake comes out of the oven, pour this paste over the top of the cake while it’s still hot. Leave the cake to cool completely in the tin, then turn out and peel off the baking paper when the top of the cake is crispy.
