A simple, fresh salad is perfect for a busy weeknight. I try to eat a salad for dinner at least once a week. That doesn't always happen, but hey, at least this salad helps me get a bit closer to that goal!

Recipe Ingredients:
1 head romaine lettuce, washed and dried, tough ends removed
1 large cucumber
1 pint cherry or grape tomatoes
1/2 cup pitted Kalamata olives
1 1/2 cups crumbled feta cheese (8 ounces)
1/2 red onion
1/2 cup plus 2 tablespoons red-wine vinegar
1/4 cup olive oil
Coarse salt and freshly ground pepper
1 small garlic clove
1/2 teaspoon dried oregano (or more if using fresh)
