This super innovative recipe uses everyday Indian ingredients to make a pizza.
ROTI PIZZA
Ingredients
1 cup whole wheat flour + for dusting
½ cup semolina
Salt to taste
A pinch baking soda
¼ cup yogurt
1½ teaspoons chopped green chillies
2 tablespoons chopped coriander leaves
1 tablespoon oil + as required
Grated processed cheese as required
½ cup semolina dosa batter
Shredded cabbage as required
Finely chopped red bell pepper as required
Finely chopped green capsicum as required
Method
1. Combine wheat flour, semolina, salt, baking soda, yogurt, 1 teaspoon chopped green chillies and 1 tablespoon chopped coriander and 1 tablespoon oil in a bowl and mix well. Add sufficient water and knead into a stiff dough. Set aside for 10-15 minutes.
2. Divide the dough into equal portions and roll out into thin rotis dusting with flour.
3. Layer the prepared rotis with some grated cheese and place another roti over the cheese and roll out again to a thin disc.
4. Heat a non-stick tawa. Place each roti pizza on the tawa and cook till evenly golden from both sides.
5. Add remaining green chillies and remaining chopped coriander to dosa batter and mix well.
6. Spread 1 tablespoon dosa batter mixture over the roti pizza. Switch off heat, top with some cabbage, red bell pepper, green capsicum and press with a spoon. Switch on heat, drizzle some oil over the vegetables, flip the pizza and cook for a minute.
7. Flip the roti pizza again, drizzle some oil, spread some grated cheese, cover and cook till cheese melts.
8. Cut into triangles and serve hot.
Preparation Time: 10-12 minutes
Cooking Time: 8-10 minutes
