Chocolate Zucchini Cake Inspired by Mistshooter223: Noreen's Kitchen

Today I am sharing a recipe for delicious, chocolate zucchini cake. Inspired by another YouTuber who is no longer creating content, Misty, who used to make amazing videos of her life on her homestead.
This chocolate zucchini cake is the perfect way to use up those scads of squash that you may be pulling from your garden. So now you have another way to enjoy the squash without slicing, dicing, stuffing or sauteing them.
This cake is simple to make from ingredients you may already have on hand. The result is a super moist and chocolatey cake that is filled with the garden goodness of zucchini. Your kids will never know that you put veggies in their cake! I promise! They will ask for seconds.
We love to eat this just out of the pan. Much like a snack'in cake with only powdered sugar sprinkled on top. Sometimes I get the notion to make a creamy fudge frosting to spread on top. Either way this is a delicious treat in the middle of summer or anytime really. We usually prep our zucchini for the freezer by grating in advance and storing in freezer bags in the right amounts for this recipe.
No matter if you choose to dust with sugar, or spread with frosting, your family is going to love this cake. My girls ask for it when they know squash is starting to come out of the garden. We love zucchini and this is just another way to enjoy it. You can also make these in muffin or cupcake tins. If you like as well.
If you prefer to make this into muffins, I suggest adding some walnuts and mini chocolate chips to the mix. If you wish to make cupcakes, simply bake these in cupcake tins and frost with fudge or cream cheese frosting. These are perfect for picnics, parties or celebrations with their individual serving size being just right for kids and grown ups alike with plenty left for seconds and thirds to be enjoyed!
