Ingredients:
Côte de Boeuf - 2,5 kg
Salt - 2 kg
Egg white - 9 eggs
Parsley - a bunch
Thyme - a bunch
Oregano - a bunch
Garlic - 3 cloves
Fennel - 2 teaspoons
Pancetta - 2 packs
How To:
01h15m - start up your barbecue set it to roast at 180C or 360F
00h45m - Mix the salt and the eggwhites
00h40m - Build up the salt crust with the herbs and pancetta to protect the côte de boeuf against the salt.
00h30m - Place the côte de boeuf on the grill and let it roast until the core reaches a temperature of 54 Celsius or 129 Fahrenheit
00h05m - Take the côte de boeuf out of the salt and grill it over direct heat. It's just a quick sear to caramelise the outside
00h00m - Enjoy!!
