In this video I will show you how to smoke a brisket. I will also show you the perfect brisket dry rub.

Ingredients:
- a whole packer brisket
Dry Rub ingredients:
- 1/2 Cup Coarse salt
- 1/4 Cup coarse ground pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon mustard powder
- 1 tablespoon dried celery leaves
- 1 teaspoon thyme
How To:
- Remove hard fat from the brisket, this will not render of during the cooking proces.
- Mix the dry rub ingredients
- Apply the dry rub to the brisket
- Set up your barbecue for smoking at 110 degrees Celsius or 225 degrees Fahrenheit.
- Smoke the brisket until it reaches a core temperature of 96 degrees Celsius or 205 degrees Fahrenheit
- Wrap the brisket in tinfoil
- Place the brisket in a cooler or in an oven at 80 degrees Celsius or 175 degrees Fahrenheit. Let it sit there for at least 2 hours.
- Carve the brisket against the grain
