A delicious crispy fritter with soft potatoes and a kick of tart and spicy red chutney!
Method:
Red chutney:
1 tbsp cayenne pepper
4 tbsp paprika
1 tbsp cajun seasoning
salt to taste
2 lemons juiced
1 tsp dried parsley flakes
1/4 cup water
Mix all together and keep it aside
Dipping batter
1 cup chickpea flour
1/2 cup rice flour
1/2 lemon juiced
salt to taste
1 tbsp dried parsley flakes
enough water so the mixture resembles a pancake mixture
Mix the above ing well and keep aside
5 to 6 large potatoes boiled
2 to 3 cups oil for frying
Method
Make and keep the red chutney aside, next make the batter mixture and keep that aside. Boil the potatoes, you can take the skin off if you like, let cool then slice them, I got about 6 pieces out of 1 potato. Once you have sliced the potatoes, take each potato and spread a thin layer of red chutney on it and cover it with another slice of potato, dip it in the batter and deep fry until golden brown...
I used 4 potatoes and that gave me 12 fritters...
