A delicious curried puri that is puffed and very delicious, goes with curries, or just butter and honey!
Ing:
2 cups white flour
3 tbsp oil to put in dough
1 tsp turmeric
1 tsp mango powder
11/2 tsp ginger and garlic puree
1 tsp green chutney
1 tbsp cayenne or to taste
1 tbsp fresh chopped coriander
half a lemon juiced
salt to taste
3 cups oil for frying
Method:
In a big bowl add the flour, salt and oil mix well than add the ginger, garlic, mango powder, turmeric, cayenne and the lemon juice as well as the chopped cilantro, mix really well, than start adding a little water to bind a pliable soft dough. Rest the dough for about 20 to 30 minutes. After the dough has rested roll in a log shape cut it and make them into rounds and with a rolling pin flatten them out and fry them. Put a little dough in the oil and it should come up right away with little bubbles.
