A blend of elbow macaroni and corn in a yummy coconut milk... A perfect side dish or just a reason to eat when you need a snack..
Recipe:
1 onion chopped
2 cups elbow macaroni boiled and drained
Olive oil
1 red bell pepper chopped
salt to taste
1 tsp cumin
1/2 tsp turmeric
1 tbsp dried parsley
1 can coconut milk
1 can corn drained and washed
1 can diced tomatoes
Cayenne pepper (optional)
Parsley for garnish (optional)
Mint for garnish (optional)
Method:
put 1 tbsp oil in a saucepan and warm then go ahead and add the chopped onion and saute till transparent, in the mean time go ahead and chop the bell peppers keep it aside. Add the cumin and salt to taste, once fragrant add the bell peppers and stir well, you want to wait until the bell peppers get a little tender now add the turmeric and the canned tomatoes, saute the mixture until it gets a little dry then add the drained corn, and coconut milk, stir and mix then add the cooked noodles and stir everything well and garnish with dried parsley flakes and fresh mint enjoy!!!
