A wonderful and very tasty dish that is usually made to celebrate happy occasions in the Khoja community!
Ing:
7 to 8 large Onions diced in small pieces
6 that are fried in little oil (keep it aside)
1 onion you can keep aside to make the mint chutney also on you tube
1 onion will be used to start making our biryany
3 tbsp Olive Oli
11/2 Meat with no fat (marinate with ginger and garlic)
1 lb can crushed Tomatos
2 Tsp Tomato paste
2 tsp Coriander powder
2 tsp Cayenne (Optional)
4 tsp Gharam Masala (we will not be adding all this at once)
1 big stick of Cinnamon
2 to 3 dried red chili peppers
1/2 cup store bought crispy fried onions (store Bought)
2 to 3 fresh potatoes cut and fred in the same oil as the onions
Fresh Coriander chopped for garnish (optional)
Salt to taste
7 to 8 strands of Saffron (optional)
Directions:
First fry all the onions and drain on the paper towel
next fry the potatoes and keep all this on the side
In a med sauce pan add the olive oil and wait till it warms up a bit, now go ahead and add one onion and saute the onions till nice and golden brown making sure you don't burn the onions, next add the dried pappers and the cinnamon stick and saute that for a while too to excrete the flavors now add the ginger and garlic as well as the meat. Mix well until the meat has turned to a brown color now add the coriander powder, 1 tbsp gharam masala, salt, and the crushed tomatoes making sure to mix it really well, add 1 tsp gharam masala mix well cover and let cook until the meat is really tender. Make sure you add the rest of the gharam masala when you mix it in between. When the meat is almost done give it about 10 min and you will see the oil has separated now you are ready to add the saffron, the potatoes and the fried onions, Mix everything really really well sprinkle a bit more gharam masala in it, and the fried onions cover and let it just get happy for about 7 min.
Serve on a bed of rice which you can sprinkle with a bit of saffron water and lay it on the rice, lastly sprinkle the fresh chopped coriander and enjoy!
Goes great with the cucumber and mint chutney!
