I know, I know, a Croque Madame is usually served for brunch, but trust me, it makes a delicious weeknight dinner too. Just think of it as a jacked-up grilled cheese -- who doesn't love that? Oh, and did I mention it's done in 20 minutes? Now we're talking!
Round up some butter, sandwich bread, melt-y cheese such as Gruyere, deli ham, and eggs, and you're ready to get started.
