BAJRE NA DHEBRA
Ingredients
1 cup bajra flour
½ cup whole wheat flour + for dusting
½ cup fresh fenugreek leaves, cleaned
1 cup warm yogurt
1¼ teaspoons finely chopped green chillies
1½ teaspoons sesame seeds
½ teaspoon red chilli powder
¼ teaspoon turmeric powder
Salt to taste
1 teaspoon oil + for cooking
Method
1. Combine bajra flour, wheat flour, fenugreek leaves, yogurt, green chillies, sesame seeds, red chilli powder, turmeric powder and salt in a bowl. Mix well and knead into a soft dough. Add 1 teaspoon oil and knead again.
2. Divide the dough into equal portions and shape them into balls. Flatten the balls and roll out into medium size rotis dusting with wheat flour. These are dhebras.
3. Heat a non-stick tawa. Place a dhebra and cook for 2 minutes on the underside. Flip, drizzle oil all around and cook till evenly done from both the sides.
4. Serve hot with yogurt and dollops of ghee.
