Today we are going back to basics! Homemade dry onion soup mix from your pantry! I love onion soup packets and usually have them on my pantry shelf. That is, until I run out, don't realize it and then need it for something I had planned to make. In this case, a roasted beef brisket for some bulk cooking ideas. When I got up to hurriedly prepare the brisket for the oven, I realized I was out of my soup mix and decided it was a great opportunity to share how to make it from scratch with items from your pantry. Really, this could not be simpler!
Get out those dehydrated onion flakes and the beef bullion. You can use salt free bullion if you need to, you will just have to grind up the cubes in the coffee grinder or mixer until they are a fine powder. I did not add any salt to this recipe because I wanted to make sure that it was not overly salty in the end. I added an array of seasonings to round out the flavor. I added some parsley, onion powder, garlic powder thyme celery seed and marjoram. Tossed everything into a pint jar, put the lid on and gave everything a shake, shake, shake.
This soup mix is a great thing to make in bulk to keep on your shelf. I plan on making this in a full quart the next time and giving it a spot on my "jar wall". Use as you would the packets from the store. I would use 1/2 cup of mix but you can adjust to your taste. In the future, I may add a bit of dehydrated carrot and celery for sweetness and flavor next time I make it as well, but this is an evolution and you should do what suits your own taste on this front.
Onion soup mix is very versatile and can be used in any number of things, from making simple French onion soup on the fly to seasoning, pot roast, meatloaf, burgers chicken, beef barley soup and in my case a very large beef brisket that has been calling me from the freezer ever since I purchased it several months ago.
If you want to make a cup of soup, blend 1 or 2 tablespoons of this mix with boiling water and allow to sit for five minutes. Then add some croutons or toasted bread and float that on top of the soup. Then sprinkle on some shredded Swiss cheese and let it melt over. You can pop that under the broiler if you like, or just enjoy a quick cup of delicious onion soup anytime you like. Pair that with a salad and you have a great lunch or light supper.
I will probably not be using the packet mix again and plan on making my own mix in a large quantity from now on. When you get ready to use the mix, just be sure to give the jar a good shake to be sure that everything is blended together well and distributed evenly!
