Crispy fried chicken that is crispy on the outside and soft and juicy on the inside, a combination made in heaven!
Ing:
2 whole chickens cut and cleaned
3 tbsp fresh ginger and garlic
1 tbsp cajun seasoning
1 tbsp spanish paprika
1 tbsp lemon pepper
salt to taste
Mix these ingredients really well before you add the
2 cups buttermilk
mix everything really well, and put it in the refrigerator for 4 to 8 hours
For the dry mix
2 cups white flour
3/4 cup rice flour
1 tsp garlic powder
1/2 to 1 tsp cajun seasoning
1/2 tsp spanish paprika
1 tsp lemon pepper
salt to taste
Mix everything well and keep it aside till ready to fry
2 cups oil for frying
Method:
Start coating the chicken in the flour mixture making sure you coat the pieces really well, drop it in the oil and cook it for 10 minutes on one side and cook the other side for 7 minutes put it on a paper towel to drain the excess oil. Serve with corn and salad...
