Ingredients: (for 2 persons)
Duck breasts - 2 breast
Noodles – 2 nests
Eggs - 2
Salt Coarse – 1/2 cup
BBQ Rub – 2 tablespoons
Ingredients for the sauce:
Ketchup – 1/2 cup
Kecap Manis (Indonesian sweet soy sauce) – ¼ cup
Chili sauce – ¼ cup
Ginger – 1 thumb size
Garlic – 1 thumb size
BBQ Rub – 2 tablespoons
Worcester sauce – 1 tablespoon
How To:
Salt the duck breast in the coarse salt for around ½ hour.
Start up your barbecue and set it to grill at a low temperature.
Rinse of the salt and pad the duck breast dry. Score the skin of the duck fat and coat the duck breast lightly with a barbecue rub.
Chop the garlic and the ginger fine and let it sweat in a pan with some sunflower oil. Add the rest of the sauce ingredients and let it simmer for 10 minutes
Cook the noodles in half chicken stock and half water. Mix them with a beaten egg and grill them on a flat top in a round shape
Grill the duck breasts
Grill some mini paksoi brush it with the sauce
Plate up and enjoy
