Bread sandwiches with potato stuffing cut into triangles, dipped into gram flour batter and deep fried.
BREAD PAKODA
Ingredients
4 white bread slices
2 cups gram flour
1 teaspoon red chilli powder
½ teaspoon turmeric powder
½ teaspoon asafoetida
Salt to taste
1 tablespoon oil + for deep-frying
1 teaspoon mustard seeds
5-7 curry leaves
1 teaspoon soda bicarbonate
4 medium potatoes, boiled, peeled and grated
Paste
½ cup finely chopped fresh coriander leaves
3-4 green chillies, roughly chopped
5-7 garlic cloves
1 inch ginger, roughly chopped
Method
1. Mix gram flour, red chilli powder, ¼ teaspoon turmeric powder and ¼ teaspoon asafoetida in a bowl. Add salt and sufficient water and mix well to make a smooth. Set aside.
2. Heat sufficient oil in a kadai.
3. Grind together coriander leaves, green chillies, garlic and ginger to a smooth paste.
4. To make stuffing, heat 1 tablespoon oil in a non-stick pan, add mustard seeds, curry leaves, remaining asafoetida and ground paste and mix well. Cook till the oil separates from the masala.
5. Add potatoes, salt and remaining turmeric powder and mix well. Cook for 2-3 minutes. Transfer into a bowl and cool.
6. Place a portion of potato stuffing on 2 bread slices, cover with the remaining bread slices, cut into triangles.
7. Add soda bicarbonate to the batter and mix well. Dip the triangles in the batter.
8. Deep-fry the triangles in hot oil till crisp and brown on both the sides. Drain on absorbent paper.
9. Serve hot.
