Spiral pasta served with a flavourful cheesy sauce
CHEESY SPIRAL PASTA
Ingredients
1 cup boiled white spiral pasta
1 cup boiled spinach spiral pasta
5-6 parmesan cheese slices
A little grated parmesan cheese
1 tbsp olive oil
1 medium onion, chopped
¼ cup fresh basil leaves + for garnishing
8-10 garlic cloves
4 tbsps tomato concasse
Salt to taste
1 tsp crushed black peppercorns
1 tsp crushed red chillies
2 tbsps fresh cream
Method
1. Heat olive oil in a non-stick pan. Add onion and saute for 2 minutes.
2. Grind ¼ cup basil leaves, garlic cloves and 2 tbsps tomato concasse. Add this to the pan and mix well.
3. Add white and spinach spiral pastas, remaining tomato concasse, salt, crushed black peppercorns, crushed red chillies and fresh cream and mix well.
4. Add parmesan slices and mix well.
5. Transfer into a serving bowl, garnish with few fresh basil leaves and grated parmesan cheese and serve hot.
