An ideal summer drink - made of kokum it is good to prevent sun stroke.
KOKUM SHERBET
Ingredients
½ cup kokum pieces
1 cup sugar
1 teaspoon roasted cumin powder
1 teaspoon lemon juice
1 teaspoon rock salt
16-18 ice cubes
Method
1. Put kokum pieces in a deep non-stick pan, add 2-3 cups water, sugar and mix well. Cover and cook for 10-15 minutes or till kokum pieces are soft. Cool to room temperature and grind alongwith its water to a smooth paste.
2. Add cumin powder, lemon juice, rock salt to the mixer jar. Grind again to a smooth paste. Strain. This is kokum concentrate.
3. Put 2 tablespoons of the prepared kokum concentrate in individual serving glasses, add ice cubes and chilled water and mix well.
4. Serve chilled.
