RECIPE!
Its super easy and i generally just throw things in depending on how much I want. This below will usually make about 4 portions, so we often throw half into a tupperware and into the fridge for the next day!
1. Blend one onion in a blender with a touch of water to loosen. Set this aside.
2. Cut your vegetables of choice - we go with 1 small broccoli, 1 sweet potato into chunks, 1/2 an onion in chunks and 2 small handfuls of peas. Add all to a bowl. Add one tbsp of ground ginger, 3 diced garlic cloves and 150ml of almond milk into a bowl and mix together. Leave this in the fridge.
3. In a large pan, heat up 1 tbsp of coconut oil. When hot, throw in 1 tbsp of chopped or ground coriander, 1tsp of garam masala, 1tsp tumeric and a pinch of black pepper and fry for a minute.
4. Then add the blended onions from step 1 into the pan with a small sprinkle of chili flakes and fry this with the spices for 5-8 mins.
5. Throw in all of the veg and milk mixture from your bowl into your big pan and mix well. Top up the pan with 150ml coconut milk, or until you feel you have a reasonable amount of sauce for your curry. I also like to throw in a thick piece of the coconut cream you can buy in cardboard packets. Leave on a low heat to cook through for 20 minutes. Dont let it boil too much or the milk will separate. Check your veg and feel free to serve according to how soft you like your veg!
6. When you're nearly ready to serve, throw in a good handful of ground almonds and mix. Then season as you desire. A good sprinkle of salt and pepper should be okay.
Serve with brown rice and Mango sauce.
I literally just use one mango, blended with a touch of chili flakes and a dash of black pepper. Its super simple but gives a refreshing taste to your curry without having to buy mango chutney which is full of sugar!
