Small boiled potatoes marinated with red chilli and garlic paste and sautéed in coconut oil

Ingredients
500 gms baby potatoes, boiled and peeled
10-12 dried red chillies, seeded and soaked
12 garlic cloves
Salt to taste
3 tbsps coconut oil
Method
1. Grind together red chillies and 10 garlic with little water to a fine paste.
2. Place the potatoes in a large mixing bowl, add ground paste and salt and mix well. Set aside to marinate for 10 minutes.
3. Heat coconut oil in a non-stick wok. Add potatoes and saute for 2-3 minutes. Cover and cook till moisture dries up and potatoes become dark red.
4. Slice 2 garlic cloves.
5. Transfer potatoes into a serving dish, garnish with sliced garlic and serve hot.
