Mushrooms cooked with garlic, white wine, pinenuts and then baked
GARIC MUSHROOMS
Ingredients
400 gms button mushrooms
2 tbsps crushed garlic
3 tbsps + 4 tsps extra virgin olive oil
Salt to taste
½ tsp crushed black peppercorns
3 tbsps white wine
2 tbsps pinenuts
Method
1. Remove stems of the mushrooms and halve the larger ones.
2. Heat extra virgin olive oil in a non-stick wok, add garlic and saute. Add mushrooms, salt and crushed black peppercorns.
3. Add white wine and mix and cook for 2-3 minutes. Add pinenuts and mix.
4. Divide the mixture equally between 4 flat bottomed bowls. Drizzle 1 tsp extra virgin olive oil over each and cook in the oven at 180° C for 20 minutes.
5. Serve hot.
