Rice mixed with plain yogurt and finally tempered with mustard seeds and curry leaves. Pomegranate pearls add an extra zing to it.
ANDHRA STYLE CURD RICE
Ingredients
2 cups cooked rice
1 cup yogurt (curd)
¼ cup milk
1 tbsp oil
Salt to taste
1 green chilli
½ tsp split skinless black gram (dhuli urad dal)
½ tsp mustard seeds
¼ tsp asafoetida
10-15 curry leaves
2 tbsps fresh pomegranate pearls
Method
1. Heat oil in a non-stick pan.
2. Place rice in a bowl, add milk and mix. Add yogurt and mix. Add salt and mix well.
3. Chop green chilli and add to rice.
4. Add black gram, mustard seeds, asafoetida and curry leaves to the pan and let the seeds splutter.
5. Add the tempering to rice and mix.
6. Chill in the refrigerator. Transfer into serving dish, sprinkle some pomegranate pearls and serve.
