Black eyed beans ground, mixed with some masalas, shaped into pakoras and deep-fried
LOBIYA PAKORA
Ingredients
1 cup black-eyed beans (lobiya), soaked overnight
½ cup split Bengal gram (chana dal), soaked
Oil to deep fry
1 cup chopped onions
1 tbsp chopped ginger
¼ tsp carom seeds (ajwain)
¼ tsp asafoetida
1 tbsp chana masala
¼ tsp baking soda
Salt to taste
1 tbsp green chilli sauce
2 tbsps gram flour (besan)
1 spring onion flower
Method
1. Drain and put black eyed beans in a chopper. Drain and add split gram and crush.
2. Heat sufficient oil in a kadai.
3. Transfer the crushed mixture into a bowl. Add onions, ginger, carom seeds, asafoetida, chana masala, baking soda, salt, green chilli sauce and gram flour and mix well.
4. Divide into small balls, press lightly, slide into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
5. Arrange them on a serving platter, garnish with spring onion flower and serve hot.
