QUINOA AND MIXED VEGETABLE PULAO
Ingredients
2 cups quinoa, soaked and drained
½ cup shredded spinach
1 medium onion, sliced
1 medium carrot, roughly chopped
5-6 button mushrooms, roughly chopped
5-6 French beans, roughly chopped
¼ cup corn kernels
1 tablespoon oil
Salt to taste
1 teaspoon cumin seeds
1 teaspoon red chilli powder
¼ teaspoon turmeric powder
1 teaspoon garam masala powder
Method
1. Heat oil in a non-stick pan, add cumin seeds and when they change colour, add onion and sauté till lightly browned.
2. Add carrots, French beans, corn kernels, mushrooms and salt and sauté on high heat for 2-3 minutes.
3. Add quinoa and mix well. Add red chilli powder, turmeric powder and garam masala powder and mix well.
4. Add spinach and 3 cups water and mix well. Bring to a boil. Cover and cook till the quinoa is completely done.
5. Serve hot.
