Soft and springy makate or rice cake broiled until crispy on the outside yet nice and soft in the inside, a great snack with a cup of coffee or chai!
2 cups rice soaked overnight
9 tbsp of sugar
2 tbsp milk
11/2 tsp yeast
1 tbsp cardamom powder
2 tbsp oil
17.8 oz coconut cream
Method:
Drain the rice and wash it with a little warm water, add that to the blender including the coconut cream, milk, oil, and the cardamom powder, blend until the mixture is really nice and smooth and completely grain free. Cover and let the mixture rise for half an hour to 45 minutes. Turn your oven on to broil setting, once the mixture is poofed up then get a med sized frying pan ready on the stove, add 1 tbsp of oil, mix the mixture well and once the pan is hot add the mixture in the frying pan and wait till the edges are dry and the middle is bubbly, then very slowly transfer the pan in the oven till the top is browned very well, transfer this on a wire rack, cut when cool, enjoy with a cup of chai!
