Greetings! Let's get ready for Easter! Everyone loves a special treat in their Easter basket right? These are absolutely perfect and simple to make. They are delicious and have few ingredients. You won't believe how easy these really are.
You start with a basic vanilla fondant filling and then you let your imagination go from there. I made coconut and peanut butter cream fillings, but why stop there? You could add Nutella and make a hazelnut truffle filling, chopped maraschino cherries and chopped walnuts and make a cherry hash filling reminiscent of one of my child hood favorites. Add lemon or orange zest and extract to make a tangy citrus filling, peppermint extract for a homemade peppermint patty, the possibilities really are endless.
Package these up in an Easter basket or make a simple box from some scrapbook paper and tie it all up with a bow. Place the eggs inside some cupcake liners before you put them in the box and you will have a beautiful presentation.
I got about 35 eggs out of one recipe but my eggs were a little on the large size. I would estimate that they were approximately the size of a traditional Reeses Peanut Butter Egg. You can make these any size or shape that you like. don't limit yourself to Easter. These can be made into bars, balls or patties, whatever you want.
These are the perfect gift when a special treat is in order. Can you just imagine these for your next wedding or baby shower?! Perfect!
You can find the full recipe as well as some suggestions for variations on the fillings at my website.
I hope you give these a try and I hope you love them.
Happy Eating!
