Freshly baked tea time cake with the flavour of pineapple.
TEA TIME PINEAPPLE CAKE
Ingredients
100 grams canned pineapple
2 eggs
100 grams butter
1 cup powdered sugar
1 cup refined flour
1 teaspoon baking powder
1-2 tablespoons milk
Method
1. Preheat oven to 180°C.
2. Break eggs in a bowl, add vanilla essence and beat till light and fluffy.
3. Cream together butter and sugar till light in another bowl.
4. Sieve together refined flour and refined flour into the butter mixture. Add beaten eggs and some of the pineapple.
5. Cut and fold the mixture. Add milk and mix well till all the ingredients are incorporated.
6. Pour the mixture into an aluminum tin, lined with greased parchment paper.
7. Put the tin in the preheated oven and bake for 25-30 minutes.
8. Remove parchment paper, cut into fingers and serve immediately.
