SPICY CRUSTED LAMB RACK - I love my smoked meats and lamb is no exception. Check out this recipe and give it a try

Total cooking time: 25 hours 10 minutes
Preparation time 24 hours 30 minutes
Cooking time 0 hours 40 minutes
Suggested tools:
Instant marinator -
Ingredients:
Rack of lamb - 2 racks
Soft goat cheese - 2 table spoons
Marinade:
Ruccola - 50 gram
olive oil - 3 tablespoons
garlic cloves - 3 cloves
chili pepper - 1 pepper
roasted pine nuts - 25 gram
Pecorino - 25 gram
How To:
25h10m - Grind the ingredients for the marinade completely fine. Remove any silver skin on the lamb racks.
25h00m - Apply the marinade on the lamb racks and set it in the fridge for 24 hours.
01h25m - Start your barbecue and set it to smoke at 140 Celsius or 300 Fahrenheit.
00h40m - Smoke the lamb rack until the core has reached a temperature of 56 Celsius or 135 Fahrenheit
00h10m - Let it rest, plate up and enjoy the feast!!!
