Achar or pickle has been an Pakistan & Indian tradition and most households have a family recipe for different varieties of pickles. The blend of different spices that is used to pickle is called the Achari masala. Apart from using this masala in the pickle, we can use it to enhance the flavor of curries, pulses and make a variety of starters. It gives a typical Achari taste to the dish which is slightly tangy, bitter and salty at the same time. You can also use Achari Masala, for making Achari Mutton, Achari Paneer, Achar Gosht, Achar Fish, Achari Chole, Achari Aloo et al.
It is super easy to prepare Achari Masala at home and once you make it, you would feel that there is no point for buying substandard Achari Masala which are available ready made in the stores. Here is the simple recipe to make it.

Crushed red chili 5 tbsp کُٹی لال مرچیں5 ٹیبل سپون
Salt 1 tbsp نمک 1 ٹیبل سپون
Turmeric powder (haldi) 1 tbsp ہلدی پائوڈر 1 ٹیبل سپون
Allspice Garam masala powder 1 tbsp گرم مصالحہ پائوڈر 1ٹیبل سپون
Fenugreek Seeds (Methi Dana) 1 tbsp میتھی دانا 1 ٹیبل سپون
Whole white cumin 2 tbsp ثابت سفید زیرہ 2 ٹیبل سپون
Mustard Seeds (Rai dana) 2 tbsp رائی دانہ 2 ٹیبل سپون
Nigella Seeds (Kalonji) 2 tbsp کلونجی 2 ٹیبل سپون
Whole coriander 2 tbsp ثابت دھنیا 2 ٹیبل سپون
Fennel Seed (soonf) 4 tbsp سونف 4 ٹیبل سپون
Citric acid 1 tsp ٹاٹری 1 ٹی سپون
