Depending on how many folks you will need
1 sweet onion for every 2 people! (not counting Sheila)
Peel your onions, cut off the ends and slice them about
3/8 inch thick. Punch out the rings and remove and save
for later any broken or small ones.
Soak the sliced rings in cold water with 1 heaping tsp. of salt
for 20 to 30 minutes. Then dredge them in plain all purpose
flour and let then set for 30 minutes so the flour will stick to
the onion rings. Now make a batter!
The batter consists of:
1 cup of all purpose flour 1/4 cup of corn starch, 1 tsp. paprika,
1 tsp. salt, 1/2 tsp. baking powder, 1/2 tsp. white pepper.
and about 1 cup of very cold beer. Add slowly until you get a batter like pancake batter, maybe a hair thinner.
Heat your oil to 350 degrees and take the flour coated onion rings
(using a chop stick or wooden skewer) and dip them into the batter, (let them soak in the batter until the batter sticks to the flour already on the onion rings.)
Drop them in the oil and cook until nice and golden brown.
They cook really nice. I find it is hard to over cook them.
Remove and place them on a bed of paper towels. Hit them with
a light dusting of salt as soon as they come out of the oil.
Let them rest for a minute or two and serve hot!
