Greetings! You asked for it and here it is! Super simple, delicious and old fashioned peanut brittle! One of the very first candies I ever learned how to make! You will love how quick and easy this is to prepare and you get a lot for a little bit of effort. This large batch will make 6 to 8 gifts depending on how you divide it up.
I will suggest that you make sure you have a candy thermometer. I would invest in a good one right off the bat instead of buying those cheap bulb versions that are available this time of year. They don't always have an accurate read and they can become damaged very easily. A good one is about 15 dollars and worth every penny! Secondly make sure you are using a good quality heavy bottomed saucepan which you can control the heat will with. Also only use a metal spoon to stir this molten substance. Silcone, rubber, or wooden spoons will be a problem. The spatulas will possibly melt and the wooden spoons can retain water that can throw off your formula and make your mixture a mess.
You can choose to use dry roasted, or raw, salted or unsalted peanuts. I prefer the raw versions because they tend to flavor the candy with a very intense peanut flavor that I happen to enjoy. The choice is yours. If you don't like, or cannot eat peanuts, you can always make this with raw almonds, or shelled pecans if you like to change things up a bit.
This candy always reminds me of my grandmother's house. Mommom always had more than one candy dish sitting out during the holidays. Peanut brittle in one, colorful ribbon candies in another and hard filled raspberry candies in yet another cut glass wonder. I don't know what it is about a cut crystal candy dish, brimming with beautiful treats, but it just takes me back to my childhood.
