This is the most delicious Chicken Risotto I have ever had! And it was so easy to make in the Pressure Cooker. You can adjust this for stove top cooking too.

Ingredients
olive oil
600g chicken thigh or breast, cut into pieces
1 brown onion, finely chopped
2 garlic cloves, finely chopped
1 1/2 cups arborio rice
1/2 cup dry white wine (I used sauvignon blanc and it was great)
3 cups chicken stock (I thought i'd used 3.5 cups but it was only 3! either way it probably wont make much of a difference)
1 teaspoon lemon juice
3/4 cup grated parmesan, plus extra to serve
a few chunks of butter
a few handfulls of baby spinach
