How to Make Stuffed Cabbage Soup: Noreen's Kitchen

Greetings! The end of a busy week has come and since we didn't have any soup for dinner this week, I decided that tonight was the night. I usually try to have soup at least one night a week because it is budget friendly and usually renders many servings. Molly requested that I make stuffed cabbage soup so here it is.
This recipe was actually my own brain child. As you may know, I usually only make stuffed cabbage rolls once a year for New Year's Day dinner. They are just our tradition and truly a labor of love and worth every single minute it takes to prepare them. One year I had bought one too many cabbages. It had stuck around in the crisper drawer for a while and I needed to use it. I also had the remaining fixings for stuffed cabbage but was not motivated at all to do that so soon after having made it for New Year's. So I browned the meat, chopped the cabbage, threw in an onion and some seasonings, a bottle of tomato juice some crushed tomatoes and some water to fill the pot along with about a cup and a half of rice and let it all simmer. Ta Da! Stuffed cabbage soup. All the flavors that we love without all the work.
Trust me, this one is a keeper. In the video you see me add more water at the end. It was needed after the rice had absorbed so much of the liquid. You can add less rice but it really does stretch the soup. After dinner tonight, I simply put the lid on the pot and placed it on the back of the stove to cool. In the morning it looked like something good to have for breakfast. It had thickened overnight, so I added another can of crushed tomatoes as well as a can of hot water and gave it a good stir. Dipped myself a bowl and heated it in the microwave. It was even better than the night before. We all at this for breakfast this morning and for lunch! I still ended up with a 2 quart jar to put in the fridge that we will have for dinner Monday night. I have given the family express instructions to keep their hands off. I don't know if the warning will work. But we shall see.
