Acclaimed wood sculptor Franco Casoni's workshop is an Aladdin's cave of wonderful carvings. He cleared a space to show us how he makes corzetti (or croxetti) stamps - a small wooden tool used to make these coin shaped pasta. And his wife Alessandra showed us how to make them. She serves the corzetti with a marjoram, garlic and pine nut salsa. You could, of course, use a small glass for a pattern free version, but these are much more fun.
Alessandra's pasta dough recipe is:
600g of plain grano tenero flour (it doesn't need to be 00)
5 egg yolks
around 100ml dry white wine - enough to bring the dough together
