Roasted Vegetable and Tilapia Sheet Pan Dinner ~ Noreen's Kitchen

The rise of the sheet pan dinner! This one is perfect for Friday nights for those of you who observe Lent with meatless Friday's! This is just a perfect meal for anytime though!
I have roasted some delicious veggies with olive oil and lemon juice and then added some Tilapia filets to finish everything off. You can choose to use any white fish you like. I think this would be great with a pan fish, flounder, pollock, halibut, cod, orange roughy or even Dover sole.
