Mushrooms stuffed with a mixture of jalapenos, parsley, breadcrumbs and cheese
Ingredients
12 large button mushrooms, stems removed
2 medium onions
8-10 garlic cloves
7-8 pickled jalapenos
3-4 sprigs fresh parsley + to garnish
100 gms processed cheese
Salt to taste
Dried breadcrumbs, as required
Olive oil as required
Method
1. Preheat oven to 200° C.
2. Chop onions, garlic, jalapenos and parsley in a chopper and transfer into a bowl.
3. Grate cheese into the bowl. Add salt and mix well. Stuff this mixture generously into the mushroom hollows.
4. Arrange the mushrooms on a non-stick baking tray. Sprinkle a little dried breadcrumbs on each mushroom, drizzle a little olive oil and cook in the preheated oven for 15-20 minutes.
5. Keep the mushrooms on a serving plate, garnish each mushroom with a little parsley and serve hot with a chutney or sauce of your choice.
