Quick and Easy Curried Daal or Lentil Curry with Raihana's Cuisines

Delicious and simple yet flavorful lentil curry that can be enjoyed with my homemade cumin rice or roti
Ing:
1 cup yellow split daal washed and drained and soaked overnight
First boil the daal in 2 cups water with
1/4 tsp turmeric
1/2 tsp salt
Boil for 30 min or until it is liquid consistency
for the curried step:
2 tbsp olive oil
2 small roma tomatoes chopped
1/2 of small onion diced in very small pieces
1 tsp ginger and garlic
2 dried red chili peppers
1/2 cinnamon stick
1/4 tsp turmeric powder
1 tsp mustard seeds
1 tsp cumin seeds
6 to 7 small curry leaves
a little less then 1/4 tsp garam masala
1 tbsp tamarind from concentrate
2 tbsp fresh chopped cilantro
salt to taste
1/2 tsp kashmiri red chili powder or cayyene (optional)
Method:
In a wok or frying pan add the oil and let that come to temperature then add the cumin seeds, mustard seeds, cinnamon, curry leaves, and ginger and garlic roast all that for about a minute until fragrant than add the tomatoes, onions and turmeric powder, and all the other spices stir and cover until the mixture has cooked a little bit and the onion has softened completely at this time at the tamarind paste, cayenne or Kashmiri chili powder and the salt, lastly add the boiled lentil mixture and stir let this come to a boil, give it a taste test and adjust your seasonings accordingly. Top with fresh coriander and enjoy with roti or cumin rice.
