When I was a kid, I always asked my mom to make me fried chicken for my birthday. Hers was super juicy with a crust so crisp, it almost shattered when you bit into it. Yet it was hardly greasy at all. Fast-forward a few years (ehm), and it's still one of my favorite treats.

1 1/4 cups all-purpose flour
2/3 cup cornstarch
Coarse salt and ground pepper
1 quart buttermilk
1 chicken (3 1/2 to 4 pounds), cut into 10 pieces, or 10 skin-on legs or thighs
