The key to today's supper is eggs. They're one of my top choices for a quick dinner. Add fresh spinach (the "green"), a little cheese (I like sharp cheddar), and a couple slices of ham, and you've got a satisfying, good-for-you meal that's done in, yes, less than 15 minutes. Mmm, I can almost taste it now.

Don't forget to tune in to today's video. Because you're cooking the spinach and eggs together, it makes the process a little different than cooking a regular omelet. I'll show you how to adjust your method.

2 cups tightly packed curly- or flat-leaf spinach, trimmed and washed (3 ounces)
2 large eggs, room temperature
Coarse salt and ground pepper
1 teaspoon unsalted butter
2 tablespoons sharp cheddar, shredded
