Greetings! Tonight I am making Tortilla Soup as promised a couple of weeks ago when I made the Chilaquilles. This soup is simple and delicious and has surprisingly few ingredients.
If you don't want to go to the trouble of cooking the chicken in advance, just go to the store and buy some good quality chicken stock in a box and a rotisserie chicken and pull the meat from the bone and that will make quick work of this soup. I would guess that you could have this on the table in about 30 minutes.
