This has been a life saver for me, for those days that I need to be in and out of the kitchen it has been easy to fix my curries quickly!
Ing:
No real measurements but this is how I kinda gage my ingredients
10 small onions
30 roma tomatoes
10 peppers or more per your taste
1/2 cup of good quality olive oil
Method:
Prepare the vegetables by cutting them in about 2 inch cubes, next take a big pot and add your olive oil in it and warm it a little and add all the ingredients in the pot and cook it for about 30 to 35 min on medium high or until the mixture is soft. Cool the mixture completely then blend the mixture and fill the bags up about 3/4 to half full. These are now ready to be put in the freezer safe bag, making sure that you take all the air out, label and date it. This can be taken out the night before or dip the bag in hot water to thaw. I don't recommend defrosting this in the microwave! This mixture can be frozen for 6 months if it is frozen correctly!
