Burger buns spread with sundried tomato pesto, topped with shredded chicken to make delicious burgers.
PULLED CHICKEN BURGER
Ingredients
500 grams chicken legs
4 brown burger buns
1 tablespoon finely chopped garlic
1 tablespoon mustard paste
Salt to taste
Crushed black peppercorns to taste
1 tablespoon olive oil + for basting
Iceberg lettuce for serving
8-10 tomato slices
8-10 onion slices
Sundried tomato Pesto
12-15 sundried tomatoes
Salt to taste
2 tablespoons walnut kernels
¼ cup olive oil
Method
1. Preheat oven to 180º C.
2. Make incision on the chicken. Put chicken into a bowl. Add garlic, mustard paste, salt, crushed peppercorns and olive oil and mix well. Set aside for 20-25 minutes.
3. Place the marinated chicken onto the baking tray, baste olive oil over it. Put the tray in the preheated oven and bake for 30-35 minutes. Remove from oven, cool to room temperature.
4. To make pesto, grind together sundried tomatoes, salt, walnut and olive oil to a smooth paste.
5. Halve burger buns.
6. Heat a non-stick pan, lightly toast the buns till heated through.
7. Shred or pull the baked chicken with fork or finger tips.
8. Place iceberg lettuce on one side of the serving plate, place base half of each bun on other side of the plate, place 2 slices of tomatoes and onions over each bun, place pulled chicken pieces over each bun, top with the sundried tomato pesto and cover with top half of the bun. Serve immediately.
