Recipe:
Sweet shortcrust pastry:
175g plain flour
25g icing sugar
100g unsalted cold butter cubed
1 egg yolk
1 tbsp cold water
Filling (I did double in video)
200ml single cream
100ml whole milk
Grated nutmeg to taste
1 large egg yolk
1 large egg
35g Caster sugar (I think)
Grated nutmeg
Equipment:
Muffin tin
Baking paper/tin foil
Baking beans/rice
Saucepan
